Easy, tasty and quick - By: Elise, 11 May 2008
This mini recipe book is one of my favouites. It has chicken breast, thigh & tenderloin fillet recipes, & most that I have tried have been delicious. In most cookbooks you find some recipes that make you say to yourself "I don't think I'll bother" - none in this book do that for me. Although I haven't tried every recipe, I have tried most & alll of them have been a success. All recipes have the fat & calorie counts so that if you are dieting you can decided which recipes are for you (one tip I've found to reduce fat & calories in the chicken thigh recipes is to use breast fillets instead where possible). It also tells you how long the dish will take from starting to make it to having it on the table (this ranges from 15-45 mins). However on days when even this is too long for you, ther are 8 "even simpler" extra quick recipes at the end of each section, which need next to no preparation.

The cooking techniques are simple & the recipes are tasty & fast to make, which makes it an ideal book for the busy mum or dad (and there's plenty here that the children will like) or someone who wants fresh food without a lot of hassle after a long day at work.

Like most Australian cooking, it is a mixture of eastern & western influenced recipes, e.g. the first recipe from each section is lemon chicken, Portuguese-style chicken thighs & tandoori chicken wraps.

If you want more quick easy recipes with a wider range of main ingredients than just chicken, I would also recomment "4 fast ingredients" from the same range.
