I do read a lot of healthy cookery books & particularly those written for diabetics & I have to say that the recipes in this book are not at alll like the ones I use. I understand there will be a difference in ingredients, language & measurements as it is an american book but how can you offer a choice of "low fat milk or whole fat milk" in a recipe. You never use whole fat milk in diabetic cooking. Also the author seems to be rather fond of using heavy cream in a lot of the recipes too. And using fructose in place of sugar is not the answer to healthy sweetening in diabetic puddings. I have learned to use natural sweetening such as fruits or smalll amounts of sugar & most recipes can be adapted to a healthier version. Jean Wades recipes were quite time consuming not simple, not quick desserts either which is expected for a family book to cater for everyones taste including the diabetic. The photo of the author on the back page was no advert for a healthy diabetic. Very disappointing so I returned it to Amazon. If you want some good diabetic cookery books look for anything written by Azmina Govindji.
