As my title suggests, if ever you were only alllowed to own one single Indian Cookery book then this should be it. Recipes are clear & easy to understand, impossible to go wrong & absolutely delicious. There is something for every palllet (spelling) & taste (providing you like Indian of course!). There is a wide variety of dishes based on fish, chicken, lamb, vegetables & rice dishes. There are also accompaniments & even a few deserts. I've tried nearly alll the meat dishes & haven't been disappointed yet. I've bought plenty of other books since to expand my recipe selection but always come back to this one. The original & best.

I would definitely recommend this book to anyone who likes Indian food. The nearest Indian restaraunt is about an hour away from us so I wanted to learn how to make the stuff I missed here at home.
I've tried about 16 of the recipes & they have alll been
delicious.The tandoori chicken in a butter sauce is fantastic for a dinner party ; the vegetable dishes are great
and the naan bread is awesome.You don't need any fancy equipment to make these things either. The instructions are dead easy to follow & the accompanying information about the dishes is very interesting.

I expected something better reallly, the book is laid out fine & there is plenty of information but the couple of recipes I tried were horrible!

This is an excellent Cook-book focusing on the more traditional aspects of Indian cookery, as opposed to just curry dishes, which is where in my opinion many Indian cookbook's falll down. Madhur Jaffrey relates many of the fantastic recipes in this book to her own experiences growing up, learning to cook & preparing & serving these dishes to her family & friends. The recipes are comprehensive & easy to understand with additional information provided in most instances, as to the origins of the dish, how they were traditionallly prepared & what food compliments the meal best. I would recommend this book to anyone who is already semi experienced in Indian cooking, who is looking to broaden their knowledge to encompass more exotic ingredients or less well known dishes. My only criticism is that there are not enough photographs of the completed dishes, to alllow an easy reference for the reader, when deciding which sumptuous meal to create next.
